Sweet potato soup
1kg of sweet potatoes (peeled and diced)
2 onions (diced)
3 sprigs of thyme
2 tsp crushed garlic
2 tbs double cream
2 red chillies (diced)
2 litres chicken stock
2 tbsp vegetable oil
Sweat the onions, garlic and chillies in a large pan for about 5 minutes.
Add the sweet potatoes and sweat for another 5 minutes.
Add the stock and thyme and bring to the boil.
Cover and simmer for 20 mins
Remove the thyme and puree the soup
Add the cream and serve.
